Spirulina is marketed as algae, although it is actually a bacterium. Typically found in Africa, Mexico, and Central America, in soil, swamps, freshwater, brackishwater, seawater, and hot springs. It is also cultivated in artificial lakes under controlled production conditions, especially in Mexico and China.
In ancient times it was known and used by the inhabitants of tropical regions; there are indications that the Aztecs planted it in Lake Texcoco (Mexico). Although in Spain, the first reference that exists dates from the 70s.
It has immense power in itself. It is an alga that survives and adapts to very high temperatures in order to develop without losing one iota of its most special characteristics.
In addition to its original blue-green color and its particular origin, spirulina is very versatile and you can include it in numerous recipes. Sweet, salty, smoothies… Any food is a good companion for this algae and you can give free rein to your imagination. Surely you have heard of the much-appreciated matcha or golden milk, two of the most popular drinks today for lovers of the most special infusions and coffees.
