White Pepper: White, absolutely white, but still pepper. It’s a lesser-known variety but no less rich or tasty.
Why is this colour so unusual for a spice? It’s caused by its harvesting period. It’s what determines the differences between peppers. All, no matter their colour, come from the same tree, the Piperacae (Brazil, Argentina, Peru), but you have to wait until they’ve matured to harvest them, which makes this pepper so unique. When they’re still red, they’re harvested and submerged in salt water. Once out of the water and dried, the peel is extracted and the white berry is protected and store for consumption. It’s a laborious, delicate process, which is why the white pepper is so special.
Its flavour is milder than black pepper but it’s usually used in recipes for its spicy touch, lighter than other peppers. Its flavour is delicate and used in “white” recipes, sauces, creams and eggs…
Black Pepper: It’s the best known ingredient that we always have on hand. Black Pepper is what our grandmothers and mothers had in their kitchens in its original corns, and now we have it in grinders so that you can always use it at its best: freshly ground, in corns or ground, black pepper is the most widely used spice in the world, considered the queen whose throne will never be stolen, thanks to its value.
Black Pepper, like all varieties, comes from the climbing tree Piperacae (originally from Brazil, Peru and Argentina), but in this case, you have to wait a little longer to harvest it, just before the end of the ripening period. After harvesting, the corns are left to ferment and then dry in the sun. It’s there that they turn black and gain their characteristic taste and smell. Spicier than others, black pepper has a very characteristic aroma that can always be recognised. It’s strong, spicy and, although loved by many, best not chewed as a corn. So, to avoid any issues, always grind your peppercorns.
Black Pepper is perfect for all kinds of dishes. It’s extremely versatile and goes well with meat, fish, salad or vegetable creams.
Green Pepper: Not as well-known as black pepper, but it has an incredible, intense flavour. All kinds of pepper come from the same tree, Piperácea (a climber that grows in the tropics), but we can obtain different varieties (white, red, black and, of course, green), depending on the treatment the pepper has after harvesting. Despite difficulties finding this pepper in the West, we’ve brought it directly to your table, with all of its properties preserved.
The Green Pepper is the earliest to be harvested and picking it from the tree before ripening is essential to keep its signature green colour. Coming from Brazil, the country with the highest green pepper production rate, lyophilisation is responsible for its green colour. Its main characteristic, compared to other varieties, is its mild flavour with a touch of menthol, making it the least spicy of all peppers.
It’s perfect for stews as it provides a milder flavour but, above all, it works best in sauces for its menthol aroma.
Pink peppercorn: An intense pink, almost red…a powerful colour that perfectly defines this pepper. Needless to say, it’s beautiful on the outside. It reigns with splendour – the pink pepper will captivate you with its strength. Who said pink is a weak colour?
The pink pepper, although not truly a pepper due to its origin, is brought to us from Latin America (Peru, Brazil, Argentina), although it’s so robust that it can be grown in many different places. From a strong tree that can grow to incredible heights, the pink pepper is a special seasoning, usually mixed with white and black pepper to enhance its flavour.
It definitely doesn’t lack spice but it’s by no means aggressive…don’t forget that we’re talking about the pink pepper. It’s sweet as well as powerful, critic but pleasant, somewhat like a pine tree. It makes a unique, exquisite addition to any recipe. One recipe it works best with is that including black and white chocolate.
